Beer-B-Que Wings with Jameson Porter

Hey Pigeon Hill gang! 

Even though I’m not a die-hard sportsball fan, I have to admit there’s something special about watching the Big Game (even if the Lions are done sportsballing for the season). Whether you’re rooting for your favorite team, tossing $20 on a square (our lawyer says don’t do that haha), or just enjoying the commercials, it’s the perfect excuse to gather with friends, family, and a mouthwatering gameday spread. And let’s be honest: one of the MVPs of any party lineup has to be wings!

When Michael asked me to whip up a food-and-beer pairing post in time for the Big Game, I knew exactly what I wanted to share: a Beer-B-Que Wing Sauce. This recipe is perfect for those who love bold flavor without the heat of traditional buffalo sauce. Plus, it’s made with our Journeyman Porter—a rich, malty beer that brings a unique depth to the sauce. (By the way, Journeyman Porter is still available in our taproom… but supplies are limited, so snag some while you can!)  Of course, if you missed out on Journeyman Porter, don’t fret – Salted Caramel Porter will put a fun spin on this recipe too!

Beer-b-que wings made with Journeyman Porter
Required Kitchen Weapons:
  • A medium saucepot
  • A whisk
  • Measuring tools

INGREDIENTS:

  • 1 cup ketchup
  • 1.5 tablespoons chili powder
  • 6 oz beer (Journeyman Porter recommended)
  • 3/4 tablespoon paprika
  • 1/2 tablespoon garlic powder
  • 1 tablespoon yellow mustard
  • 1/4 teaspoon cayenne pepper (adjust to taste)
  • 1 tablespoon brown sugar (or more for a sweeter sauce)
  • 1 tablespoon molasses
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste

Feel free to get creative with the seasonings to suit your flavor preferences (I added cumin – and it was awesome) —this recipe is a great starting point!

MAKING THE SAUCE

  1. Combine all ingredients in your saucepot and place it over medium heat. Stir until well blended.
  2. Once the mixture starts bubbling, reduce the heat to a simmer. Let it cook for about 10 minutes to meld the flavors and cook off the alcohol.
  3. Taste and adjust seasonings if needed. Then, pour the sauce into a mason jar and let it cool. This recipe makes a little more than a pint.

Pro tip: Make the sauce the day before to save time on game day and allow the flavors to develop. It keeps in the fridge for about a week and pairs beautifully with ribs, pulled pork sandwiches, and more.

MAKING THE WINGS

  1. Season your wings with your favorite rub (even just salt and pepper works well since the sauce is packed with flavor).
  2. Cook the wings using your preferred method: bake, fry, air-fry, grill, or smoke. Ensure they reach an internal temperature of 165°F.
  3. Toss the wings in warm Beer-B-Que sauce and serve with classic sides like celery, carrots, and your favorite dipping sauces.
